Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper for easy cleanup.
Open the can of Pillsbury biscuits and separate them. Flatten each biscuit slightly with your hands to create a round shape.
Place a cube of mozzarella cheese in the center of each biscuit. Fold the dough over the cheese, pinching the edges tightly to seal.
Arrange the cheese-filled biscuits seam-side down on the prepared baking sheet.
In a small bowl, combine the melted butter, minced garlic, parsley, and Italian seasoning. Brush this garlic butter mixture generously over the tops of the biscuits.
Bake the biscuits for 12–15 minutes, or until they are golden brown and puffed up.
(Optional) Sprinkle the hot biscuits with grated Parmesan cheese for an extra cheesy finish.
