Step-by-Step Instructions for Cheesy Ground Beef & Potato Casserole
  1. Heat 2 tablespoons of olive oil in a large skillet over medium heat.
  2. Add 1 pound of ground beef to the skillet and brown for about 5-7 minutes.
  3. Stir in 1 chopped onion and 2 minced garlic cloves, cooking for 3-4 minutes.
  4. Mix in 4 cups of diced potatoes, salt, pepper, 1 teaspoon of paprika, and 1 teaspoon of dried oregano.
  5. Pour in 1 cup of beef broth and cover, simmering on low for 20-25 minutes.
  6. Sprinkle 2 cups of shredded cheddar cheese on top and simmer until melted.
  7. Garnish with chopped parsley before serving.
