- In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add 1 pound of ground beef and break it apart. Cook for about 5-7 minutes until browned.
- Stir in 1 chopped onion and 2 minced garlic cloves. Cook for 3-4 minutes until the onion is soft and translucent.
- Add 3 diced medium potatoes, 1 teaspoon salt, 1/2 teaspoon black pepper, 1 teaspoon paprika, and 1/2 teaspoon oregano. Mix thoroughly.
- Pour in 1/2 cup of beef broth, stir gently, cover, and reduce heat to low. Simmer for 20-25 minutes until potatoes are tender.
- Sprinkle 1 cup of shredded cheddar cheese on top. Cover and cook for an additional 2-3 minutes until the cheese is melted and bubbly.
- Remove from heat and sprinkle with 1 tablespoon of chopped parsley. Serve hot and enjoy!
