For the Casserole
  • 1 pound Ground Beef or ground turkey/chicken for a leaner option
  • 2 tablespoons Olive Oil or any cooking oil or butter
  • 1 medium Onion chopped; consider shallots or leeks
  • 2 cloves Garlic minced; or 1/2 teaspoon of garlic powder
  • 3 medium Potatoes peeled and diced; sweet potatoes can be used
  • 1 teaspoon Salt to enhance flavor
  • 1/2 teaspoon Black Pepper freshly ground is preferred
  • 1 teaspoon Paprika smoked paprika can deepen flavor
  • 1/2 teaspoon Dried Oregano Italian seasoning can be used
  • 1 cup Shredded Cheddar Cheese or mozzarella/Monterey Jack
  • 1/2 cup Beef Broth or vegetable broth
  • 1 tablespoon Fresh Parsley chopped for garnish; green onions or chives are alternatives
For the Toppings
  • Additional Cheese optional; a blend of your favorites
  • Crushed Tortilla Chips optional; great for a crunchy finish

Method
 

Step-by-Step Instructions
  1. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add 1 pound of ground beef and break it apart. Cook for about 5-7 minutes until browned.
  2. Stir in 1 chopped onion and 2 minced garlic cloves. Cook for 3-4 minutes until the onion is soft and translucent.
  3. Add 3 diced medium potatoes, 1 teaspoon salt, 1/2 teaspoon black pepper, 1 teaspoon paprika, and 1/2 teaspoon oregano. Mix thoroughly.
  4. Pour in 1/2 cup of beef broth, stir gently, cover, and reduce heat to low. Simmer for 20-25 minutes until potatoes are tender.
  5. Sprinkle 1 cup of shredded cheddar cheese on top. Cover and cook for an additional 2-3 minutes until the cheese is melted and bubbly.
  6. Remove from heat and sprinkle with 1 tablespoon of chopped parsley. Serve hot and enjoy!
