Step-by-Step Instructions
  1. Heat 2 tablespoons of olive oil in a large skillet over medium heat until shimmering.
  2. Add 1 pound of ground beef to the skillet and cook until browned, about 5-7 minutes.
  3. Stir in 1 chopped onion and 2 minced garlic cloves, cooking for another 3-4 minutes.
  4. Incorporate 4 cups of diced potatoes, seasoning with salt, pepper, 1 teaspoon of paprika, and 1 teaspoon of dried oregano.
  5. Pour in 1 cup of beef broth over the mixture, cover, and simmer for 20-25 minutes until potatoes are tender.
  6. Sprinkle 1-2 cups of shredded cheddar cheese over the top, cover again, and let it melt for 2-3 minutes.
