- Preheat the Oven: Preheat your oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish with cooking spray or butter.
Prepare the Meatloaf Base:
- In a large bowl, combine the ground beef, ground pork, chopped onion, breadcrumbs, milk, egg, Worcestershire sauce, salt, black pepper, and garlic powder.
- Mix until just combined, being careful not to overmix to keep the meatloaf tender.
- Bake the Meatloaf Layer: Press the meat mixture evenly into the prepared baking dish. Bake for 25–30 minutes, or until the meatloaf is fully cooked.
- Add the Mashed Potatoes: Spread the mashed potatoes evenly over the cooked meatloaf layer.
- Top with Cheese and Bacon: Sprinkle the shredded cheddar cheese and crumbled bacon over the mashed potatoes.
- Finish Baking: Return the casserole to the oven and bake for an additional 10–15 minutes, or until the cheese is melted and bubbly.
- Garnish and Serve: Remove from the oven, let it rest for a few minutes, and garnish with chopped green onions if desired. Slice and serve hot.
