Ingredients
  

  • 2 cups broccoli florets
  • 2 cups cauliflower florets
  • 1 cup sliced carrots
  • 1 can 10.5 ounces cream of mushroom soup
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/2 cup crushed buttery crackers
  • 2 tablespoons melted butter
  • Salt and pepper to taste

Method
 

  1. Preheat oven to 350°F (175°C).
  2. Lightly steam broccoli, cauliflower, and carrots until just tender.
  3. In a bowl, mix cream of mushroom soup, sour cream, salt, and pepper.
  4. Combine veggies and sauce; mix well.
  5. Transfer to a greased 9x13-inch baking dish.
  6. Top with shredded cheddar cheese.
  7. Mix crushed crackers with melted butter and sprinkle over the top.
  8. Bake for 30–35 minutes until golden and bubbly.

Notes

  • Substitute veggies with what you have on hand.
  • Add a pinch of cayenne for a little spice.
  • Make it vegan by using dairy-free cheese and soup.
