Ingredients

For the Crust
  • 1.5 cups Graham Cracker Crumbs Substitute with gluten-free graham cracker crumbs for a GF option.
  • 1/3 cup Confectioners' Sugar Can be replaced with powdered erythritol for a low-sugar version.
  • 6 tablespoons Butter Use coconut oil for a dairy-free crust.
For the Filling
  • 8 ounces Cream Cheese Replace with dairy-free cream cheese for a vegan option.
  • 1 cup Confectioners' Sugar Use a sugar alternative if desired.
  • 8 ounces Frozen Whipped Topping Use fresh whipped cream for an even richer taste.
For the Topping
  • 21 ounces Cherry Pie Filling Fresh cherries or other fruit fillings can be used as alternatives.

Equipment

  • Mixing Bowl
  • Electric Mixer
  • 8-inch square pan

Method

Preparation Steps
  1. Preheat your oven to 350°F (175°C) if you prefer a toasted graham cracker crust. In a mixing bowl, combine graham cracker crumbs, confectioners' sugar, and melted butter. Stir until all crumbs are moistened. Firmly press this mixture into the bottom of a greased 8-inch square pan and bake for 8-10 minutes until lightly golden. Let it cool completely.
  2. In a large mixing bowl, beat softened cream cheese with confectioners' sugar using an electric mixer until smooth and creamy, about 2-3 minutes. Gently fold in thawed frozen whipped topping until combined.
  3. Spread the cream cheese filling evenly over the cooled graham cracker base.
  4. Evenly distribute the cherry pie filling over the cream cheese layer, ensuring it's covered.
  5. Cover with plastic wrap and refrigerate for at least 1 hour to let the flavors meld, preferably overnight.
  6. Slice into squares and serve cold, garnished with extra cherry topping or mint if desired.
