Step-by-Step Instructions
  1. Preheat your oven to 325°F (160°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine sweetened shredded coconut, sweetened condensed milk, ube extract, and a pinch of salt. Mix until well incorporated.
  3. Fold in chopped macadamia nuts if using, being gentle to maintain texture.
  4. Drop rounded tablespoons of the mixture onto prepared baking sheet, leaving space between each mound.
  5. Bake for 18-22 minutes until edges are golden brown and tops are set.
  6. Allow the macaroons to cool for a few minutes on the baking sheet before transferring to a wire rack to cool completely.
