Method
- Preheat oven to 375°F (190°C).
- In a large bowl, mix chicken, rice, black beans, corn, enchilada sauce, salsa, chili powder, and cumin until well combined.
- Pour mixture into a greased 9x13-inch baking dish. Top with shredded cheese.
- Bake for 20–25 minutes, until cheese is bubbly and melted.
- Let sit for 5 minutes, then serve with chips, sour cream, and cilantro.
Notes
- You can add sautéed onions or peppers for extra texture.
- Use leftover rotisserie chicken for ease.
