Ingredients
  

  • 1 tablespoon olive oil
  • 1 small onion sliced
  • 2 garlic cloves minced
  • 2 chipotle peppers in adobo chopped
  • 1 teaspoon adobo sauce
  • 1 15 oz can crushed tomatoes
  • 1/2 teaspoon oregano
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
  • 2 cups shredded cooked chicken
  • Corn tortillas or tostadas for serving
  • Toppings: sour cream avocado, queso fresco, cilantro

Method
 

  1. In a large skillet, heat olive oil over medium heat. Sauté onion until softened, about 4 minutes. Add garlic and cook for 1 minute.
  2. Stir in chipotle peppers, adobo sauce, crushed tomatoes, oregano, and cumin. Simmer for 10 minutes.
  3. Add shredded chicken to the sauce and cook for another 5 minutes, allowing the flavors to meld.
  4. Serve warm in tortillas or on tostadas with desired toppings.

Notes

  • Use rotisserie chicken for quicker prep.
  • Adjust chipotle peppers for desired spice level.
  • The sauce can be blended for a smoother texture before adding the chicken.
