  • 1 small red onion thinly sliced
  • 1 cup fresh parsley roughly chopped
  • 1 handful fresh mint optional
For the Dressing
  • 1/4 cup extra virgin olive oil high-quality
  • 1 piece lemon juiced
  • 1 clove garlic minced

Method
 

Preparation
  1. Rinse and drain the chickpeas, allowing them to dry. Cube the avocados and toss with lemon juice.
  2. Thinly slice the red onion and chop the parsley and mint.
Combine Ingredients
