Ingredients
  

Chickpea Flour Tofu
  • 1 cup Chickpea Flour A great base that provides structure and protein.
  • 1 cup Water Hydrates the flour; less yields firmer tofu.
  • 1/2 teaspoon Salt Optional, enhances flavor.
  • 1/2 teaspoon Turmeric Optional, adds color and flavor.
Dried Chickpea Tofu
  • 1 cup Dried Chickpeas Soak overnight for best results.
  • 2 cups Fresh Water Essential for blending into a creamy base.

Method
 

Chickpea Tofu Instructions
  1. In a medium mixing bowl, combine chickpea flour with 1 cup of water and whisk until smooth.
  2. In a saucepan, bring 1.5 cups of water to a rolling boil over medium-high heat.
  3. Gradually pour in the chickpea mixture while stirring continuously until thickened.
  4. Reduce the heat to low and let the mixture simmer for an additional 5-6 minutes.
  5. Pour the mixture into a mold and let it cool at room temperature for 10-15 minutes.
Silken Tofu Instructions
  1. Rinse 1 cup of dried chickpeas and soak them in water for at least 8 hours.
  2. After soaking, drain chickpeas, blend with 2 cups of fresh water until smooth.
  3. Strain the mixture through a nut milk bag to remove solids.
  4. Transfer the strained liquid into a saucepan and bring to a gentle boil while stirring.
  5. Let it simmer for about 20 minutes until thickened, then cool completely.
