  • 2 medium Cucumbers peeled and deseeded
  • 1/2 cup Lime Juice freshly squeezed preferred
  • 3/4 cup Sugar

Method
 

Step-by-Step Instructions
  1. Wash and peel the cucumbers. Cut them in half lengthwise and scoop out the seeds. Chop into small chunks.
  2. Blend the chopped cucumber, lime juice, and sugar until smooth and creamy, about 1-2 minutes.
  3. Pour the mixture into an ice cream maker and churn for about 20-25 minutes until soft-serve consistency. Alternatively, freeze in a container, stirring every 30-60 minutes for 2 hours.
  4. For a firmer texture, freeze the sorbet for an additional 2-3 hours after it reaches soft-serve.
  5. Scoop into bowls or cones and garnish with mint leaves, lime wedges, or cucumber slices.
