- In a highball glass, place about 8–10 fresh mint leaves along with two quartered limes. Gently muddle for about 30 seconds.
- Pour 1–2 tablespoons of lavender syrup over the muddled mixture. Stir gently for about 10 seconds.
- Fill the glass with ice cubes, packing them in well. Leave a little space at the top.
- Top off with about 4–6 ounces of chilled sparkling water. Stir gently for about 5 seconds.
- Garnish with a fresh mint sprig, a lime wheel, or lavender buds. Serve immediately.
