  • 2 Large Eggs

  • 1 cup Mashed Ripe Bananas the riper, the better!
For the Cinnamon Sugar Mixture
  • 1/4 cup Melted Butter cooled slightly
  • 1/2 cup Granulated Sugar
  • 1/4 cup Brown Sugar for depth of flavor
  • 2 teaspoons Ground Cinnamon
For Garnish
  • 1 Banana Banana Slices for decoration

Step-by-Step Instructions
  1. Preheat oven to 350°F (177°C) and grease a 9x5-inch loaf pan.
  2. Melt 1/2 cup unsalted butter and let it cool slightly; add 1 cup granulated sugar and mix well.
  3. Crack in 2 large eggs and pour in 1 teaspoon vanilla extract; stir until smooth.
  4. Fold in 1 cup mashed ripe bananas.
  5. In a separate bowl, whisk together 1 1/2 cups all-purpose flour and 1 teaspoon baking soda; gradually fold this into the banana mixture.
  6. In a small bowl, combine 1/4 cup melted butter, 1/2 cup granulated sugar, 1/4 cup brown sugar, and 2 teaspoons ground cinnamon.
  7. Layer approximately 1/4 of the banana batter in the loaf pan, then dollop some cinnamon sugar mixture on top; repeat twice more.
  8. Slice a banana and place the pieces down the center of the batter before baking.
  9. Bake for 60-70 minutes until golden brown and a toothpick comes out clean.
  10. Cool in the pan for about 30 minutes before transferring to a wire rack to cool completely.
