Ingredients
  

  • 1 lb cooked shrimp chopped
  • 1 cup lime juice about 6–8 limes
  • 1/2 red onion finely chopped
  • 1 jalapeño minced
  • 1/2 cup chopped tomatoes
  • 1/2 cup chopped cucumber
  • 1/4 cup chopped cilantro
  • Salt and pepper to taste
  • Optional: diced avocado for topping

Method
 

  1. In a bowl, combine shrimp and lime juice. Let it marinate for 10–15 minutes.
  2. Add onion, jalapeño, tomato, cucumber, cilantro, salt, and pepper.
  3. Mix well and refrigerate for 30 minutes to allow flavors to meld.
  4. Serve chilled with tortilla chips or in lettuce cups.
  5. Add avocado before serving if desired.

Notes

  • Use pre-cooked shrimp for ease, or briefly boil raw shrimp. Adjust jalapeño to your spice level preference.
