Ingredients
  

  • 2 lbs russet potatoes peeled and diced
  • 3 hard-boiled eggs chopped
  • 1/2 cup mayonnaise
  • 1 tablespoon yellow mustard
  • 1/4 cup diced onion
  • 1/4 cup chopped celery
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon sugar
  • Salt and pepper to taste
  • Paprika for garnish

Method
 

  1. Boil potatoes until fork-tender, about 10-12 minutes. Drain and cool.
  2. In a large bowl, mix mayonnaise, mustard, vinegar, sugar, salt, and pepper.
  3. Add potatoes, eggs, onion, and celery. Stir gently to combine.
  4. Chill for at least 1 hour before serving.
  5. Sprinkle paprika on top for garnish.

Notes

  • Tastes even better the next day.
  • Add chopped pickles for extra zing.
