- In a large bowl, combine the shredded chicken, mayonnaise, and Dijon mustard. Stir until the chicken is well coated.
- Add the grapes, celery, red onion, parsley, and lemon juice. Mix gently to combine, being careful not to mash the grapes.
- Season with salt and pepper to taste.
- Chill the chicken salad in the refrigerator for at least 30 minutes before serving to allow flavors to blend.
- Serve on sandwich bread, croissants, lettuce wraps, or enjoy on its own!

- You can use rotisserie chicken, poached chicken, or leftover grilled chicken for this recipe.
- For a lighter version, substitute half the mayo with plain Greek yogurt.
