Ingredients
  

  • 2 cups cooked and shredded chicken breast
  • 1/2 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1/2 cup red grapes halved
  • 1/4 cup finely chopped celery
  • 2 tablespoons chopped red onion
  • 1 tablespoon chopped fresh parsley
  • 1 teaspoon lemon juice
  • Salt and pepper to taste

Method
 

  1. In a large bowl, combine the shredded chicken, mayonnaise, and Dijon mustard. Stir until the chicken is well coated.
  2. Add the grapes, celery, red onion, parsley, and lemon juice. Mix gently to combine, being careful not to mash the grapes.
  3. Season with salt and pepper to taste.
  4. Chill the chicken salad in the refrigerator for at least 30 minutes before serving to allow flavors to blend.
  5. Serve on sandwich bread, croissants, lettuce wraps, or enjoy on its own!

Notes

  • You can use rotisserie chicken, poached chicken, or leftover grilled chicken for this recipe.
