  • 1 bell pepper red or green, diced
  • 1 small red onion thinly sliced
  • 1 cup Kalamata olives pitted
  • 8 ounces feta cheese crumbled
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Method
 

  1. In a large bowl, combine the cherry tomatoes, cucumber, bell pepper, red onion, and Kalamata olives.
  2. In a separate small bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and pepper until well combined.
  3. Pour the dressing over the salad ingredients and toss gently to combine.
  4. Sprinkle the crumbled feta cheese on top of the salad.
  5. Serve immediately or let it chill in the refrigerator for about 30 minutes to allow the flavors to meld.
