  • 1 cup Almond Milk Can substitute with other plant-based milks

  • 2 tablespoons Lime Juice Freshly squeezed recommended
  • 1 teaspoon Vanilla Extract Opt for pure vanilla
  • 1 tablespoon Cornstarch Optional, mix with water to form slurry
  • 1/4 cup Shredded Coconut Optional, for serving

Method
 

Step-by-Step Instructions
  1. In a blender, combine the frozen mango, full-fat coconut milk, almond milk, honey, lime juice, vanilla extract, and cornstarch if using. Blend on high for about 30 seconds or until smooth.
  2. Carefully pour the blended mixture into popsicle molds, leaving space at the top. Insert popsicle sticks straight into each mold.
  3. Place the filled molds in the freezer for a minimum of 6 hours, ideally overnight.
  4. Run warm water over the molds to release the popsicles, sprinkle shredded coconut on top if desired, and refreeze for 10 minutes.
  5. Serve the Coconut Mango Popsicles immediately for the best flavor and texture.
