Step‑by‑Step Instructions
  1. In a large bowl, combine the chicken thighs with olive oil, red wine vinegar, paprika, oregano, thyme, and a pinch of chili flakes. Mix everything thoroughly to ensure the chicken is well-coated in the marinade. Allow the chicken to marinate for at least 10 minutes.
  2. Heat a large skillet over medium-high heat and add a drizzle of olive oil. Once hot, add the marinated chicken thighs to the pan, searing each side for about 4-5 minutes until golden brown. Use tongs to flip the chicken carefully, then remove and set aside.
  3. In the same skillet, add more olive oil if needed, then toss in the finely chopped onion and crushed garlic. Sauté for 2-3 minutes until the onion is translucent and fragrant. Stir occasionally, making sure not to let the garlic brown.
  4. Stir in the remaining paprika, oregano, thyme, and a pinch of chili flakes to the sautéed onions and garlic. Pour in the white wine and chicken stock. Bring to a simmer, scraping the bottom of the pan to deglaze.
