  • 1 head Green Cabbage sliced into strips
  • 3 cups Yukon Gold Potatoes thinly sliced
  • 1 medium Onion thinly sliced
  • 2 cups Beef Broth (Low Sodium) or chicken broth
  • 2 tbsp Unsalted Butter cut into small dots
  • 1 tbsp Dijon Mustard for flavor
  • 1 tsp Black Pepper
  • 1 tsp Garlic Powder

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and grease a deep baking dish.
  2. Slice Yukon Gold potatoes thinly and create an even layer at the bottom of the baking dish.
  3. Scatter thinly sliced onions on top of the potatoes evenly.
  4. Chop the cooked corned beef into bite-sized pieces and layer it evenly over the onions.
  5. Spread the sliced green cabbage evenly over the corned beef layer.
  6. Pour the beef broth over the entire casserole and dot with unsalted butter.
  7. Cover the baking dish tightly with aluminum foil and bake for about 1 hour.
  8. Remove the foil about 10 minutes before done to allow the top to brown.
  9. Let the casserole rest for 10-15 minutes before serving.
