Ingredients
  

  • 1 cup cottage cheese
  • 1 large egg
  • 1 cup all-purpose flour plus more for dusting
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1 tablespoon olive oil plus more for cooking
  • 1/4 cup green onions finely chopped (optional)
  • 1/2 cup fresh vegetables like lettuce, cucumber, tomatoes, or any preferred fillings
  • 1/4 cup shredded cheese optional

Method
 

  1. Make the Dough
  2. In a large mixing bowl, combine the cottage cheese, egg, all-purpose flour, salt, and baking powder. Stir until a soft dough forms. If the dough feels sticky, sprinkle in more flour, one tablespoon at a time, until manageable.
  3. Knead and Rest
  4. Turn the dough out onto a floured surface and knead gently for about 1 minute, just until smooth. Cover the dough with a clean kitchen towel and let it rest for 15 minutes.
  5. Divide and Roll
  6. Divide the dough into 4 equal portions. Roll each portion out into a thin flatbread shape, about 1/8 inch thick, on a lightly floured surface.
  7. Cook the Flatbread
  8. Heat a skillet over medium heat and drizzle with a small amount of olive oil. Place one rolled-out flatbread onto the hot skillet and cook for 2-3 minutes per side, or until golden brown and cooked through. Repeat with the remaining flatbreads.
  9. Assemble and Serve
  10. Once the flatbreads are cooked, let them cool slightly. Add your desired fillings, such as fresh vegetables, shredded cheese, or even a dollop of hummus. Fold the flatbread over the fillings and serve warm.

Notes

  • Add Extra Flavor: Mix chopped herbs, garlic powder, or chili flakes into the dough for a flavorful twist.
  • Storage: Store cooked flatbreads in an airtight container in the fridge for up to 3 days. Reheat in a skillet before serving.
