  • 1 cup corn kernels fresh, frozen, or canned
  • 1 red bell pepper diced
  • 1 avocado diced
  • 1/2 cup red onion finely chopped
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup fresh cilantro chopped
  • 1/4 cup olive oil
  • 2 tablespoons lime juice
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

Method
 

  1. In a large bowl, combine the romaine lettuce, cherry tomatoes, black beans, corn, red bell pepper, avocado, red onion, cheddar cheese, and cilantro. Toss gently to mix all the ingredients evenly.
  2. In a small bowl, whisk together the olive oil, lime juice, chili powder, garlic powder, salt, and pepper until well combined.
  3. Drizzle the dressing over the salad and toss gently to coat all the ingredients.
  4. Serve immediately or chill in the refrigerator for about 30 minutes to allow the flavors to meld.
