Step-by-Step Instructions
  1. Prepare the Chicken: Rinse chicken thighs, pat dry, season with salt and pepper, and let rest for 15 minutes.
  2. Preheat and Cook Bacon: Heat skillet over medium heat, add bacon, and cook until crispy (6-8 minutes). Remove bacon and leave drippings.
  3. Brown the Chicken: Add butter to drippings, melt, and brown chicken thighs skin-side down for 8-10 minutes. Flip and cook for another 6-7 minutes.
  4. Sauté Shallots and Garlic: Remove chicken, add shallots and garlic, and sauté for 5-6 minutes until shallots are translucent.
  5. Combine Ingredients: Return chicken to skillet, add wine, swirl to deglaze, and mix in bacon and thyme.
  6. Bake the Chicken: Preheat oven to 375°F (190°C), transfer skillet to oven, and bake uncovered for 30 minutes.
