Steps
- Preheat your oven to 375°F (190°C). Gather all ingredients and equipment.
- Heat olive oil and butter in a large pot over medium-high heat. Season beef with salt and pepper. Brown the beef for 6-8 minutes.
- Add chopped onion and diced carrots; sauté for 4-5 minutes until softened.
- Sprinkle flour over the beef and vegetables and cook for 1-2 minutes.
- Pour in apple cider and beef broth; stir well and bring to a boil, then reduce heat to simmer.

- Drain potatoes, return to pot and add milk, sour cream, and cheddar cheese; mash until smooth.
- Plate mashed potatoes and ladle stew over the top. Garnish with fresh chives.
