These Healthy Fresh Fish Cakes are a perfect blend of flavor and nutrition. With tender fish, fresh herbs, and zesty lemon, they’re a wholesome option for any meal. Ingredients
  

  • 1 lb 450 g fresh fish fillets (cod, haddock, or salmon)
  • 1 cup cooked and mashed potatoes
  • 1/2 cup breadcrumbs panko or whole wheat
  • 1 egg lightly beaten
  • 2 tablespoons fresh parsley chopped
  • 1 green onion finely chopped
  • 1 clove garlic minced
  • Zest of 1 lemon
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste
  • 1 tablespoon olive oil for cooking

Method
 

  1. Cook the Fish
  2. Steam or poach the fish fillets until just cooked through (about 8–10 minutes).
  3. Allow the fish to cool slightly, then flake it into small pieces using a fork, removing any bones.
  4. Mix the Ingredients
  5. In a large mixing bowl, combine the flaked fish, mashed potatoes, breadcrumbs, egg, parsley, green onion, garlic, lemon zest, Dijon mustard, salt, and pepper.
  6. Mix gently until the ingredients are evenly combined.
  7. Shape the Fish Cakes
  8. Divide the mixture into 8 portions and shape each portion into a patty about 1/2 inch thick. If the mixture is sticky, lightly coat your hands with breadcrumbs.
  9. Cook the Fish Cakes
  10. Heat the olive oil in a large skillet over medium heat.
  11. Place the fish cakes in the skillet and cook for 3–4 minutes per side until golden brown and crispy.
  12. Serve and Enjoy
  13. Transfer the fish cakes to a serving plate and serve warm with your favorite dipping sauce or a side of fresh greens.

Notes

    • Fish Choice: Fresh cod, haddock, or salmon work best, but you can also use tilapia or pollock.
    • Chill the Mixture: For firmer patties, refrigerate the mixture for 15 minutes before shaping.
    • Baking Option: For a healthier option, bake the fish cakes at 375°F (190°C) for 20 minutes, flipping halfway through.
    • Serving Suggestions: Pair with tartar sauce, a squeeze of lemon, or a crisp green salad for a complete meal.
