Step-by-Step Instructions
  1. Finely chop one onion and mince two garlic cloves. Clean mushrooms and slice them. Thinly slice seitan.
  2. Heat olive oil in a skillet over medium heat. Add onions and sauté for 5-7 minutes until soft and golden.
  3. Stir in minced garlic and cook for 1-2 minutes until fragrant.
  4. Increase heat to medium-high and add sliced mushrooms. Sauté for 8-10 minutes until browned.
  5. Push mushroom mixture to the side and add sliced seitan. Cook for 3-4 minutes until slightly browned.
  6. Add flour and stir for about 2 minutes to cook out raw flavor.
  7. Gradually pour in vegetable broth while stirring continuously. Bring to a simmer and cook for 3-4 minutes.
  8. Stir in sour cream, mustard, soy sauce, paprika, and thyme. Simmer for another 5-7 minutes until thickened.
  9. Prepare noodles according to package instructions, about 8-10 minutes. Drain once al dente.
  10. Combine noodles with stroganoff sauce or serve separately. Garnish with fresh parsley.
