- Finely chop one onion and mince two garlic cloves. Clean mushrooms and slice them. Thinly slice seitan.
- Heat olive oil in a skillet over medium heat. Add onions and sauté for 5-7 minutes until soft and golden.
- Stir in minced garlic and cook for 1-2 minutes until fragrant.
- Increase heat to medium-high and add sliced mushrooms. Sauté for 8-10 minutes until browned.
- Push mushroom mixture to the side and add sliced seitan. Cook for 3-4 minutes until slightly browned.
- Add flour and stir for about 2 minutes to cook out raw flavor.
- Gradually pour in vegetable broth while stirring continuously. Bring to a simmer and cook for 3-4 minutes.
- Stir in sour cream, mustard, soy sauce, paprika, and thyme. Simmer for another 5-7 minutes until thickened.
- Prepare noodles according to package instructions, about 8-10 minutes. Drain once al dente.
- Combine noodles with stroganoff sauce or serve separately. Garnish with fresh parsley.
