  • 1 medium Sweet Onion Chopped
  • 3 cloves Garlic Minced
  • 2 tbsp Bacon Grease or Butter
  • 1 tsp Paprika Smoked recommended
  • 1 cup Gouda Cheese Shredded
  • 1 cup Pumpkin Puree Canned, pure
  • Salt and Pepper To taste

  • 12 large Pasta Shells Cooked al dente
Garnish
  • 2 tbsp Chives Chopped

Method
 

Preparation Instructions
  1. Preheat your oven to 350°F (175°C).
  2. In a skillet, cook the chopped bacon over medium-low heat until crispy, about 8-10 minutes. Drain and leave 2 tablespoons of grease.
  3. Sauté chopped onion and minced garlic in the bacon grease for 4-5 minutes until translucent. Stir in smoked paprika.
  4. Mix in pumpkin puree, half the bacon, and half the gouda. Season with salt and pepper, cooking for 3-4 minutes.
  5. Boil salted water in a large pot, cook shells al dente (8-10 minutes), then drain and rinse in cold water.
  6. Stuff each shell with the pumpkin mixture and place in a baking dish.
  7. Top with remaining bacon and gouda cheese.
  8. Bake for 20-25 minutes until cheese is melted and bubbly.
  9. Garnish with chopped chives and serve.
