Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. Slice a pocket into each chicken breast without cutting all the way through.
  3. Stuff each pocket with 2-3 slices of Brie cheese.
  4. Spoon cranberry sauce generously over the Brie in each pocket.
  5. Season the outside of the chicken breasts with salt and pepper.
  6. Coat the outside of each stuffed chicken breast with breadcrumbs.
  7. Transfer to a baking dish and bake for 25-30 minutes until done.
  8. Allow to rest for about 5 minutes before serving.
