- Preheat your oven to 375°F (190°C).
- Slice a pocket into each chicken breast without cutting all the way through.
- Stuff each pocket with 2-3 slices of Brie cheese.
- Spoon cranberry sauce generously over the Brie in each pocket.
- Season the outside of the chicken breasts with salt and pepper.
- Coat the outside of each stuffed chicken breast with breadcrumbs.
- Transfer to a baking dish and bake for 25-30 minutes until done.
- Allow to rest for about 5 minutes before serving.
