- Measure all ingredients for the Cranberry-Rose Turkish Delight. Cook fresh cranberries in a saucepan with a bit of water on medium heat for about 5-7 minutes until soft, then strain and puree.
- Combine granulated sugar, water, and lemon juice in a medium saucepan over medium heat. Stir until the sugar completely dissolves, about 3-4 minutes. Add cranberry puree and rose water, stirring well.
- Mix cornstarch with a small amount of water in a separate bowl until smooth. Gradually add this to the boiling mixture, stirring constantly for 10-15 minutes until thick and glossy.
- Line a square baking pan with parchment paper. Pour the thickened mixture into the pan and smoothen the top. Let it set at room temperature for at least 4 hours or overnight.
- Sprinkle powdered sugar over the top. Cut into squares or rectangles, dusting the knife with powdered sugar as needed for clean cuts.
