Filling
  • 1 cup Apple Butter homemade recommended
  • 3 large Eggs
  • 1 cup Heavy Cream can substitute with half-and-half
  • 1 teaspoon Cinnamon or to taste
  • 1 teaspoon Nutmeg or to taste
Crust
  • 1 cup Spelt Flour can substitute with all-purpose flour
  • 2 tablespoons Sugar coconut sugar optional
  • 1/4 teaspoon Salt coarse kosher salt preferred

Method
 

Prepare the Pie
  1. Preheat your oven to 350°F (175°C). In a mixing bowl, combine spelt flour, sugar, and salt, then cut in cold butter until the mixture resembles coarse crumbs.
  2. Press the dough into a 9-inch pie pan and blind bake for 15–20 minutes until lightly golden.
  3. In a large bowl, whisk together apple butter, eggs, heavy cream, cinnamon, and nutmeg until smooth.
  4. Once the crust is slightly cooled, pour the filling into it.
  5. Preheat the oven to 325°F (163°C) and bake for 40–45 minutes.
  6. Cool the pie at room temperature for about an hour, then refrigerate for at least 6 hours.
  7. Serve chilled with a dollop of maple whipped cream.
