Ingredients

  • Boneless skinless chicken breasts
  • Cream cheese softened
  • Chicken broth
  • Garlic powder
  • Onion powder
  • Italian seasoning
  • Olive oil
  • Grated Parmesan cheese
  • Salt and freshly ground black pepper
  • Fresh parsley chopped (optional, for garnish)

Method

  1. Season the chicken breasts with salt, pepper, garlic powder, onion powder, and Italian seasoning.
  2. Heat olive oil in a skillet over medium heat. Sear the chicken for 2-3 minutes per side until golden brown. Remove and set aside.
  3. In the same skillet, add chicken broth and softened cream cheese. Stir continuously until smooth and creamy.
  4. Mix in Parmesan cheese, adjusting seasoning as needed. Simmer for 2-3 minutes until slightly thickened.
  5. Preheat the oven to 375°F (190°C). Place the seared chicken in a greased baking dish and pour the creamy sauce over it.
  6. Bake for 25-30 minutes until the chicken is cooked through and the sauce is bubbly.
  7. Let rest for a few minutes, garnish with parsley, and serve hot.

Notes

    • Use chicken thighs instead of breasts for a juicier option.
    • For a lighter version, swap full-fat cream cheese with low-fat cream cheese or Greek yogurt.
    • Add red pepper flakes for a little spice.
    • This dish pairs well with mashed potatoes, pasta, or roasted vegetables.
    • Store leftovers in the refrigerator for up to 3 days and reheat gently on the stovetop.
