Method
 

Step-by-Step Instructions
  1. Prep all ingredients: Wash and slice leeks and mushrooms, measure cheese and cream.
  2. In a skillet, melt butter over medium heat and caramelize leeks with salt for 10-15 minutes.
  3. Add mushrooms to the skillet and sauté for an additional 5-7 minutes until tender.
  4. Reduce heat, add cream, and stir in Gruyere cheese until melted and thickened.
  5. Cook pasta in boiling salted water, drain, and toss with the sauce, using reserved pasta water as needed.
  6. Serve hot, garnished with extra Gruyere or fresh herbs.
