Ingredients
  

  • 12 oz spaghetti
  • 2 tablespoons olive oil
  • 2 chicken breasts cooked and diced
  • 6 slices bacon chopped
  • 3 cloves garlic minced
  • 3 large eggs
  • 1 cup grated Parmesan
  • 1/2 teaspoon black pepper
  • Salt to taste
  • Fresh parsley chopped (for garnish)

Method
 

  1. Cook spaghetti; reserve 1 cup pasta water.
  2. In a pan, cook bacon until crisp. Add garlic and cook 1 minute.
  3. Whisk eggs, Parmesan, salt, and pepper in a bowl.
  4. Toss hot pasta with egg mixture, adding reserved water slowly to create a creamy sauce.
  5. Stir in chicken and bacon.
  6. Garnish with parsley and serve warm.

Notes

    • Do not return the pasta to heat after adding the eggs or they’ll scramble.
    • Use pancetta instead of bacon for a traditional twist.
