  • 1 pound Boneless Skinless Chicken Breasts
  • 1 teaspoon Garlic Powder
  • to taste Salt
  • to taste Black Pepper
  • 1/4 cup Flour gluten-free flour is a good substitute
For Sautéing
  • 3 tablespoons Olive Oil may need extra for the second batch
  • 1 tablespoon Butter
For the Sauce
  • 8 ounces Cremini Mushrooms sliced; can substitute with button mushrooms
  • 1/2 medium Onion chopped
  • 1 tablespoon Dijon Mustard adjust to taste
  • 1 tablespoon Worcestershire Sauce adjust to taste
  • 2/3 cup Chicken Broth low-sodium recommended
  • 1/2 cup Full-Fat Sour Cream use at room temperature

Method
 

Step-by-Step Instructions
  1. Cut the boneless skinless chicken breasts into 1-inch pieces. Season with garlic powder, salt, and black pepper, then coat with flour.
  2. Heat 2 tablespoons of olive oil in a deep skillet over medium-high heat. Add half of the chicken and cook for about 3 minutes per side until golden brown and fully cooked. Transfer to a plate.
  3. Repeat the sautéing process with the remaining chicken in the same skillet. Transfer to the plate with the first batch.
  4. Lower the heat, add remaining olive oil and butter. Sauté chopped onion and sliced mushrooms for 6-8 minutes until browned.
  5. Stir in Dijon mustard and Worcestershire sauce. Optionally add minced garlic and cook for another minute.
  6. Pour in chicken broth, scraping up browned bits. Simmer and return chicken to the skillet for about 2 minutes.
  7. Reduce heat to low, stir in sour cream until smooth. Adjust seasoning if necessary before serving.

Notes
