Ingredients
  

  • Boneless skinless chicken breasts (2 lbs)
  • Penne pasta 12 oz, uncooked
  • Broccoli florets 3 cups, fresh or frozen
  • Heavy cream 2 cups
  • Chicken broth 1 ½ cups
  • Grated Parmesan cheese 1 ½ cups
  • Garlic cloves 4, minced
  • Italian seasoning 1 teaspoon
  • Garlic powder 1 teaspoon
  • Salt and black pepper to taste
  • Cream cheese 4 oz, cubed
  • Fresh parsley for garnish

Method
 

  1. Season and Cook the Chicken: Season chicken with Italian seasoning, garlic powder, salt, and black pepper. Cook in a skillet over medium-high heat for 6-7 minutes per side until golden and cooked through. Remove and set aside.
  2. Boil Pasta and Broccoli: Cook pasta in salted water according to package instructions, adding broccoli during the last 3 minutes. Drain and set aside.
  3. Make the Garlic Parmesan Sauce: In the same skillet, sauté garlic until fragrant. Stir in chicken broth and heavy cream, then add cubed cream cheese. Whisk until smooth.
  4. Combine Everything: Stir in Parmesan cheese, then add the cooked pasta, broccoli, and sliced chicken. Toss everything together until well coated in the creamy sauce.
  5. Serve and Garnish: Sprinkle with fresh parsley and extra Parmesan. Serve warm and enjoy!

Notes

  • For a lighter version, use half-and-half instead of heavy cream.
  • Substitute rotisserie chicken for a quicker meal.
  • If the sauce thickens too much, add a splash of milk or broth before serving.
