- Season the chicken thighs with salt and black pepper. Let rest for a few minutes.
- Sear the chicken thighs skin-side down in hot olive oil or butter for 5-7 minutes until golden brown.

- In the same skillet, add sliced onion and cook for 5 minutes until soft.
- Add minced garlic and sauté for 30 seconds.

- Nestle in the chicken, cover, and simmer for 25-30 minutes until cooked through.
- Remove chicken and stir in Dijon mustard and heavy cream to thicken the sauce.
- Return chicken to skillet to soak in the sauce. Serve with fresh herbs and crusty bread.
