Ingredients
  

  • 1 pound shrimp peeled and deveined
  • 2 tablespoons olive oil
  • 4 cloves garlic minced
  • 1/2 teaspoon paprika
  • 1 cup full-fat coconut milk
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Chopped parsley for garnish

Method
 

  1. Heat olive oil in a skillet over medium heat.
  2. Add garlic and sauté until fragrant, about 1 minute.
  3. Add shrimp, season with paprika, salt, and pepper. Cook 2–3 minutes per side until opaque.
  4. Stir in coconut milk and bring to a simmer.
  5. Add lemon juice, stir, and cook 2–3 more minutes until sauce thickens slightly.
