Step‑by‑Step Instructions
  1. In a large pot, heat 2 tablespoons of olive oil over medium heat. Add 1 diced onion and sauté for about 4-5 minutes until softened and translucent.
  2. Stir in 2 tablespoons of minced garlic and ½ teaspoon of kosher salt. Cook for an additional minute until fragrant.
  3. Add 1 tablespoon of tomato paste, 1 tablespoon of sugar, and 2 teaspoons of dried basil. Sauté for another minute to combine.
  4. Pour in 2 cans of whole tomatoes and 3 cups of low sodium vegetable broth. Stir, cover, and let simmer for 20 minutes.
  5. Transfer the mixture to a blender, add 1½ cups of cottage cheese, and blend until smooth.
  6. Pour the blended soup back into the pot. Season with pepper, ladle into bowls, and garnish with parmesan and basil.
