  • 2 tablespoons olive oil or any cooking oil
  • 1 pound Italian sausage meat mild, sweet, or hot
  • 1 chopped onion white, yellow, or brown
  • 1 stalk celery omit if preferred
  • 3 cloves garlic minced
  • 1 teaspoon ground fennel omit if desired
  • 1 teaspoon dried rosemary or use fresh
  • ¼ teaspoon red pepper flakes optional
  • a pinch nutmeg optional
  • ½ cup dry white wine or substitute with broth
  • 1 cup heavy cream or half-and-half
  • 1 cup chicken or vegetable broth low-sodium recommended
  • ½ cup Parmesan cheese freshly grated preferred
  • to taste salt
  • to taste freshly ground black pepper
For the Pasta
  • 12 oz dried pasta fettuccine, rigatoni, or penne
For Garnish
  • to taste fresh parsley optional garnish

Method
 

Step-by-Step Instructions for Creamy Italian Sausage Pasta
  1. Heat 2 tablespoons of olive oil in a large skillet over medium heat.
  2. Add 1 pound of Italian sausage meat, breaking it apart and sautéing for 7-8 minutes until browned.
  3. Stir in 1 chopped onion and 1 chopped celery stalk; cook for 15 minutes until soft and translucent.
  4. Add 3 minced garlic cloves, 1 teaspoon of ground fennel, 1 teaspoon of dried rosemary, ¼ teaspoon of red pepper flakes, and a pinch of nutmeg; cook for 1 minute.
  5. Pour in ½ cup of dry white wine to deglaze the skillet and simmer for 2-3 minutes until reduced by half.
  6. Stir in 1 cup each of heavy cream and chicken or vegetable broth, seasoning with salt and pepper; cover and simmer for 20 minutes.
  7. Meanwhile, bring a pot of salted water to boil and cook 12 oz of pasta for 1 minute less than package instructions.
  8. Drain the pasta, reserving ¼ cup of the pasta water; add drained pasta to the skillet and stir to combine.
  9. Stir in ½ cup of freshly grated Parmesan cheese until melted; adjust seasoning as needed.
  10. Serve warm, garnished with additional Parmesan and chopped parsley if desired.
