Step-by-Step Instructions
  1. Preheat the oven to 350°F (180°C) and grease a 9x13-inch baking dish.
  2. Wash and peel the potatoes, then dice them into small, uniform cubes.
  3. Cook the bacon in a skillet over medium heat until crispy, about 8-10 minutes.
  4. In a mixing bowl, combine the diced potatoes, ¾ of the cheddar cheese, crumbled bacon, garlic powder, and salt.
  5. Stir in the mayonnaise until the mixture is creamy.
  6. Spread the potato mixture in the greased baking dish and top with remaining cheddar cheese.
  7. Bake in the oven for approximately 90 minutes until golden and bubbly.
  8. Garnish with chopped green onions before serving.
