Preparation Steps
- Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish with cooking spray or oil.
- In a large mixing bowl, combine cream of chicken soup, sour cream, and chicken stock. Stir in minced garlic, onion powder, baby spinach, orzo pasta, cooked chicken, 1.5 cups of Monterey Jack cheese, and 1/4 cup of Parmesan cheese.
- Season the mixture with kosher salt and black pepper to taste. Stir until all ingredients are evenly combined.
- Pour the combined mixture into the greased baking dish, spreading evenly.
- Sprinkle the remaining Monterey Jack cheese and crispy fried onions on top. Cover with aluminum foil.
- Bake covered for 25 minutes. Remove foil and bake uncovered for an additional 10-15 minutes until cheese is melted and lightly browned.
- Remove the dish from the oven and let it rest for about 5 minutes before serving.
