  • 2 cups Cooked Chicken, shredded Rotisserie chicken is recommended.
For the Creamy Sauce
  • 2 cups Monterey Jack Cheese, shredded Cheddar can be used for a sharper flavor.
  • 1 can Rotel Tomatoes, undrained Can be swapped with diced tomatoes and chili powder.
  • 115 g Cream Cheese Greek yogurt can be used as a lighter alternative.
  • 2 tablespoons Butter Olive oil can be a healthier substitute.
  • 1 cup Chicken Broth Vegetable broth can be used as a non-meat alternative.
For the Aromatics
  • 3 cloves Garlic, minced Garlic powder can be used in a pinch.
  • 1 small Onion, chopped Shallots or green onions can be alternatives.
For Crunch and Flavor
  • 6 slices Bacon, diced Turkey bacon can be a lighter option.
  • Salt and Black Pepper Adjust to taste.

Method
 

Step-by-Step Instructions
  1. Bring a large pot of salted water to a boil. Add the spaghetti and cook until al dente, about 8-10 minutes. Drain and set aside.
  2. In a large skillet, cook the diced bacon over medium heat until crispy, about 6-8 minutes. Remove bacon, leaving the fat in the skillet.
  3. Sauté the chopped onion in the bacon drippings for 3-4 minutes, then add minced garlic for another minute.
  4. Melt 2 tablespoons of butter into the skillet, then add cream cheese and chicken broth, whisk until smooth and creamy.
  5. Fold in the undrained can of Rotel tomatoes and simmer for about 5 minutes.
  6. Stir in shredded chicken and drained spaghetti, mixing well to coat with sauce. Heat through for about 3 minutes.
  7. Mix in 1 cup of Monterey Jack cheese until melted and well incorporated.
  8. Preheat the oven to 350°F (175°C). Transfer mixture to a greased 9x13 baking dish, top with remaining cheese and bacon.
  9. Bake for 20 minutes until edges are bubbling and cheese is golden, then let sit before serving.
