Ingredients
  

  • 2 lbs red potatoes chopped
  • 3 eggs hard-boiled and diced
  • 1/2 cup mayonnaise
  • 1/4 cup yellow mustard
  • 1/4 cup chopped pickles or relish
  • 1/4 cup chopped red onion
  • 1/4 cup diced celery
  • Salt and pepper to taste
  • Paprika for garnish

Method
 

  1. Boil potatoes until tender, about 10-12 minutes. Drain and let cool.
  2. In a large bowl, mix mayo, mustard, pickles, onion, celery, salt, and pepper.
  3. Fold in potatoes and eggs until combined.
  4. Chill for 1-2 hours before serving.
  5. Garnish with a sprinkle of paprika.
