  • 1 cup Rolled Oats
  • 1 cup Milk (dairy or non-dairy) Almond or oat milk for vegan option.
  • 1/2 cup Canned Pumpkin Purée Avoid pumpkin pie filling.
  • 2 tablespoons Chia Seeds Can substitute with flaxseeds.
  • 1 teaspoon Vanilla Extract
  • 1 teaspoon Pumpkin Pie Spice
  • 2 tablespoons Maple Syrup or Honey Adjust to taste.
Cheesecake Layer
  • 1/2 cup Greek Yogurt or Cream Cheese For creaminess.

Method
 

Prepare Oats Base
  1. In a mason jar or medium bowl, combine rolled oats, your choice of milk, canned pumpkin purée, chia seeds, vanilla extract, pumpkin pie spice, and maple syrup. Stir well until all ingredients are fully incorporated.
Make Cheesecake Layer
  1. In a small bowl, mix Greek yogurt or cream cheese with a splash of milk and a drizzle of maple syrup until smooth and creamy.
Layer Mixture
  1. Spoon half of the oat mixture into the prepared mason jar, then add a layer of the cheesecake mixture, followed by the remaining oat mixture.
Chill
  1. Cover the mason jar tightly and refrigerate for at least 4 hours or overnight.
Serve
  1. In the morning, stir the oats gently and add a splash of milk if needed. Garnish with crushed graham crackers, a dash of cinnamon, and extra maple syrup.
