- In a large Dutch oven, set over medium heat, add the diced bacon. Cook for about 5 minutes, stirring occasionally, until crispy.
- Add diced yellow onion and chopped celery to the pot with the bacon. Sauté for roughly 3 minutes until the onion is translucent.
- Incorporate fresh corn kernels and continue cooking for an additional 4 minutes until the corn is tender.
- Stir in the minced garlic and cook for about 1 minute until fragrant. Carefully pour in the chicken broth and bring to a gentle simmer.
- Mix in the diced russet potatoes, followed by salt, pepper, paprika, dried parsley, thyme, and cayenne.
- Fold in the chopped zucchini and yellow squash. Continue cooking for another 10-12 minutes until potatoes are tender.
- Remove about 2 cups of the chowder and carefully transfer to a blender. Puree until smooth and return to the pot.
- Mix in the half and half, stirring well to incorporate. Allow to sit for about 10 minutes before serving.
