Cook pasta according to package instructions. Reserve 1/4 cup of pasta water and drain.
Season chicken with salt and pepper. In a large skillet, heat oil over medium-high and sear chicken until golden and cooked through. Remove and set aside.
In the same pan, sauté garlic and sun-dried tomatoes for 1–2 minutes.
Stir in cream, Parmesan, and Italian seasoning. Simmer for 3–4 minutes.
Add spinach, cooked pasta, and reserved water. Toss until combined.
Return chicken to pan and simmer 2–3 more minutes until heated through.
Serve hot with extra Parmesan if desired.
