Ingredients
  

  • 1 ½ lbs boneless skinless chicken breasts or thighs
  • 1 14.5 oz can diced tomatoes
  • 1 cup tomato sauce
  • ½ cup chicken broth
  • 3 cloves garlic minced
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp dried basil or ¼ cup fresh basil, chopped
  • 1 tsp dried oregano
  • ½ tsp red pepper flakes optional, for heat
  • ½ cup heavy cream
  • ½ cup grated Parmesan cheese
  • 2 tbsp cornstarch mixed with 2 tbsp water optional, for thickening
  • 2 tbsp butter
  • Fresh basil and extra Parmesan for garnish

Method
 

  1. Assemble in Slow Cooker: Add chicken, diced tomatoes, tomato sauce, chicken broth, garlic, salt, pepper, basil, oregano, and red pepper flakes to the slow cooker. Stir to combine.
  2. Cook Low & Slow: Cover and cook on low for 6–7 hours or high for 3–4 hours, until chicken is tender.
  3. Add Cream & Cheese: Stir in heavy cream, Parmesan cheese, and butter. If a thicker sauce is desired, mix in the cornstarch slurry and cook for another 15 minutes.
  4. Serve & Enjoy: Garnish with fresh basil and extra Parmesan. Serve over pasta, rice, or with crusty bread.
