Ingredients
  

  • Vegetable broth
  • Canned black beans drained
  • Corn kernels
  • Canned diced tomatoes
  • Green chiles
  • Onion chopped
  • Garlic minced
  • Chili powder
  • Cumin
  • Paprika
  • Salt
  • Pepper
  • Lime juice
  • Tortilla strips
  • Avocado sour cream, or cilantro for topping

Method
 

  1. Add all ingredients except toppings to the crockpot.
  2. Stir to combine and cover.
  3. Cook on low for 6–7 hours or high for 3–4 hours.
  4. Taste and adjust seasoning, then stir in lime juice.
  5. Serve hot with tortilla strips and toppings of choice.
