Method
- Add all ingredients except toppings to the crockpot.
- Stir to combine and cover.
- Cook on low for 6–7 hours or high for 3–4 hours.
- Taste and adjust seasoning, then stir in lime juice.
- Serve hot with tortilla strips and toppings of choice.
Notes
- Add cooked rice or quinoa for extra heartiness.
