Step-by-Step Instructions for White Bean Alfredo Sauce
  1. Warm the oil by pouring 2 tablespoons of extra virgin olive oil into a medium pot over medium heat for 1–2 minutes.
  2. Sauté 1 cup of chopped shallots in the hot oil for 3–4 minutes until translucent and tender.
  3. Stir in 3 cloves of minced garlic and sauté for another minute until fragrant.
  4. Transfer the sautéed shallots and garlic to a blender with 1 can of drained white beans, ¼ cup of vegetable broth, 2 tablespoons of fresh lemon juice, and 2 tablespoons of nutritional yeast. Blend until smooth.
  5. Cook 8 ounces of red lentil spaghetti in salted boiling water according to package directions, usually 7–9 minutes, then drain.
  6. Return the drained spaghetti to the pot over low heat and pour in the creamy White Bean Alfredo Sauce. Mix thoroughly for 1–2 minutes.
